Mediterranean Salad with Smoked Trout

Dressing Ingredients:

3 tablespoons red wine vinegar

2 tablespoons chopped fresh Italian parsley

2 tablespoons chopped fresh oregano

½-1 teaspoon grated orange peel

½-1 teaspoon fennel seeds

½ teaspoon crushed red pepper

¼ cup good olive oil

Salt and pepper to taste (SPTT)

 

½ or 1 small fennel bulb, core removed, thinly sliced

½ cup chopped cherry tomatoes, halved

½ cup thinly sliced sweet onion (red looks really pretty)

1 cup canned chickpeas, drained and rinsed

1 Diana’s Specialties Smoked Trout fillet (6-7 oz)

4 cups mixed baby greens

 

Whisk together the first 6 ingredients and gradually whisk in olive oil.  Season with SPTT.

 

Combine fennel, tomatoes, onion, chickpeas and greens.  Break up trout into chunks and add to salad.  Sprinkle about ¼ to ½ of the dressing onto salad, add more if needed.

 

**Optional: small mozzarella balls, drained, cut in half or crumbled feta cheese
